Red Mayan Habanero
Species: Capsicum chinense | Origin: Mexico | Pungency: Very Hot
Red Mayan Habanero is a variety that was supposedly found growing in a small town near the ancient Maya city of Uxmal, located in the Puuc region of the Eastern Yucatán Peninsula, Mexico. Said to be immune to most viruses, the plants have a somewhat compact spreading growth habit and produce very good yields of elongated, blocky-shaped chillies which start light green and ripen through several shades of orange and then to bright red. About two weeks before the ripening process begins they turn a darker shade of green, and the fruits typically have small tails, which can either be blunt or pointy. Red Mayan Habanero chillies have a slight floral aroma and a tropical fruity flavour and work very well in salsas, sauces, stews, stir fries and Caribbean and Yucatecan cuisines.
Another Capsicum chinense variety labelled as 'Habanero Maya [Red]' also exists, but it's not the same as the one shown below. The chillies are elongated and more closely resemble those of Paper Lantern, which is another Capsicum chinense variety from Peru.
