NuMex Heritage Big Jim is a New Mexican pod-type cultivar that was bred by the Chile Pepper Institute (CPI) to be an improvement on the original NuMex Big Jim, an heirloom variety that was released by the New Mexico State University (NMSU) in 1975. The name was chosen to distinguish the newly selected cultivar from the original one, whilst still retaining the association. The plants have the same growth habit as the original heirloom but produce higher yields, and the large, thick-walled peppers, which start green and ripen to red, are more uniform in shape and have a better flavour and a higher, more consistent heat level. The original NuMex Big Jim is listed in the Guinness Book of World Records as producing the world's largest ever pepper at 13.5-inches long! NuMex Heritage Big Jim peppers have an excellent flavour and are good in stir fries, salsas, soups, stews and casseroles. They also make a great choice for stuffing or grilling and work very well in chili con carne.
