Charapon Amarillo

Charapon Amarillo comes from the Amazon region of Peru. The plants have a spreading growth habit and produce excellent yields of small, cherry-shaped chillies which start green and ripen through a couple of shades of orange and then to bright orange. Although the fruit is known for its small size, it's not as small or anywhere near as fiery as that of Aji Charapita, a popular small-fruited Capsicum chinense variety also from the Amazon region of Peru.
The average chilli is about the size of a wild cherry, but sometimes they can be smaller. Unripe fruit doesn't have much flavour and has very little, if any, heat. Ripe fruit has a subtle sweetness and a fruity flavour and a mild–medium heat. The heat is quite short-lived and is mostly concentrated at the sides and tip of the tongue and at the back of the throat. Small ripe and unripe fruit is typically heat-free, whereas medium and large-sized fruit has a heat that ranges from mild to medium. Charapon Amarillo chillies have a pleasant fruity flavour and work very well in sauces, salsas, soups, stews and stir fries. They also work very well on pizza and are good for pickling.
