Bulgarian Carrot, also known as 'Shipkas' and 'Hot Carrot', is an early heirloom variety that produces good yields of medium-thick-walled chillies which start green and ripen to bright orange. Believed to have been smuggled from behind the Iron Curtain during the Cold War, this variety also grows reasonably well outdoors in the UK, although doing so can sometimes result in the skins on the chillies being tough. Bulgarian Carrot chillies have a crispy texture and are good for spicing up soups, stews and salsas. They also work very well on pizza.
