Antillais Caribbean, also known as 'Caribbean Antillais', is a popular variety from the Netherlands Antilles in the Caribbean, and in 2021 it received the Royal Horticultural Society (RHS) Award of Garden Merit (AGM). The plants have a fairly compact growth habit and produce excellent yields of ribbed, blocky-shaped chillies which start light green and ripen through several shades of orange and then to bright red. Antillais Caribbean chillies have a good flavour, although it's not as pronounced as some other Capsicum chinense varieties, and work very well in salsas, sauces, stews, stir fries and Caribbean and Yucatecan cuisines. Due to the flavour and aroma being less pronounced than some other Habanero and Scotch Bonnet types this variety makes a good choice for adding extra fire to Indian curries, chili con carne or any other foods where you don't want the Capsicum chinense flavour to be a dominating top note in the dish.
