Aji Limo

Aji Limo is a well known Peruvian variety named after the city of Lima, the capital and largest city in Peru, and is widely cultivated in the northwestern cities of Lambayeque, Piura and Tumbes. The plants have a fairly compact growth habit and produce excellent yields of elongated, and often slightly curved, tapered chillies which start green and ripen through yellow-green, orange and then to fiery red. Several colour variants exist but red (rojo) and yellow (amarillo) appear to be the most commonly available ones outside of Peru. Aji Limo chillies have a slight floral aroma and a mild citrus-like flavour and are typically used raw in Peruvian cuisine for spicing up sauces, rice dishes and seafood dishes, the most notable of which being tiradito and cebiche.
