Aji Largo, also known as 'Rocoto Aji Largo', is a variety from the city of Loja in Southern Ecuador, which is situated at 2060 meters above sea level and located in the bottom part of the Cuxibamba Valley. The plants have a compact spreading growth habit and produce excellent yields of medium-thick-walled, juicy peppers which start green and ripen to scarlet red. The branches are quite slender and flexible and the fruit shape is elongated and tapered. It's an easy Capsicum pubescens variety to grow and it performs very well outdoors here in North Wales during the growing season. It also performs reasonably well indoors providing it receives adequate light and some help with flower pollination. Aji Largo Rocoto peppers are great for spicing up many types of food, such as stews, soups, salsas, sauces, stir fries, rice dishes, pasta dishes and casseroles.
